Hey Emily! Making your turkey today but just wanted to clarify, in one section you say you preheat to 325 but then in the next it says 350. Which one do you recommend for a 15lb turkey?

Hi! Thanks for catching that! I fixed it so they all say 325. I'll add that 350 is also a good temp to roast a turkey. Everyone likes a "right" answer, but there isn't one. There's a lot of flexibility in what temp a turkey can be roasted - as long as you have a thermometer and take it out around 155-160, you're good. If you like really dark skin you can do a higher temperature, you just have to be more careful with timing so it doesn't over cook or burn in parts (wing tips, top of bird.) I would do 325 and I'd start checking it after 3 and a half hours. Happy Thanksgiving!

If I did this with a turkey breast, bone in, would you put the onions/apple and such in the roasting pan?

Yes! That will help yo get a nice flavor in your pan drippings and the aromatics will infuse the turkey
