Meyer Lemon Risotto (with or without mushrooms)


Simple, inexpensive, packed with flavor. Also creamy, comforting and bright with the zing of fresh citrus. I recommend Meyer lemons if you can find them, but regular lemons work beautifully, too. A sprinkle of parsley finished this off, though basil or chives would also be great. Adding very simply seared mushrooms makes this a fantastic vegetarian dinner. GET THE RECIPE HERE….
Roasted Salmon with Radishes and Meyer Lemon
This dish is everything I love about cooking—minimal effort, maximum payoff. Family style roasted salmon, juicy and tender, paired with roasted radishes and a splash of Meyer lemon to bring it all together. Serve it with a simple green veggie (broccolini, snap peas, green beans or asparagus), salad, and potatoes or rice. Turkey Chili: Crowd Favorite
I made a quadruple batch of my Ultimate Turkey Chili this week for a catering job. It’s hearty, healthy, and perfect for feeding a crowd. Whether you’re making it for a holiday party or freezing portions for a cozy weeknight dinner, this recipe never misses. My kids also suprised me and loved it despite being able to see the cooked peppers in it. They built their own bowls with cheddar cheese, cilantro and lime wedges.
