Double Chocolate Crinkle Cookies
Or mint chocolate crinkle cookies.... (someone told me Santa is a fan)
This recipe comes from an old cooking notebook of mine, dating back to my catering days in Houston. These cookies are as simple as they come—extremely kid-friendly and, best of all, they taste like brownies in cookie form. The dough can hang out in the fridge for up to a week, so you can bake them fresh whenever the mood strikes. Perfect for holiday gifting or nibbling all day like a Christmas mouse.
Want to get wild? Add chocolate chips for extra decadence—or mint chocolate chips if you love a mint and chocolate pairing, I sure do — Guittard makes some and so does Andes and Lilly’s.
One last tip: when rolling them in powdered sugar, don’t skimp. Give them a thick coat. A thin layer won’t give you that beautiful, snowy, crackly finish you’re looking for.
Chocolate Crinkle Cookies
Yield: 20-24 cookies
Ingredients:
1 cup sugar
1/4 cup butter at room temperature
2 eggs at room temperature
1 cup flour
1/2 cup unsweetened cocoa powder (Dutch processed for a deeper chocolate flavor)
1 tsp baking powder
1/2 tsp salt
1/2 cup chocolate chips (optional)
1 cup powdered sugar
Instructions:
In a standing mixer or a large mixing bowl, cream sugar and butter for 2 minutes (mixture will be grainy.)
Beat in eggs one at a time and mix until combined.
Add remaining ingredients, except powdered sugar, and beat until thoroughly combined.
Refrigerate dough 1 hour or freeze for 15 minutes.
Pour powdered sugar into a small bowl. Use a small scooper or tablespoon to scoop balls slightly smaller than golf balls and drop them in the powdered sugar. Use a fork to roll them around and then roll with your hands to make sure they get thoroughly coated.
Place balls on a greased baking sheet 2” apart (they will spread a little bit, not too much) and bake at 350 for 10-12 minutes. Let them cool for a few minutes on the baking sheet, and then use a spatula to transfer to a cooking rack or plate.
Makes about 20-24 cookies.
