Cashew, Date and Coconut Energy Balls
Vegan, gluten free, dairy free, egg free, and packed with healthy fats and protein

I absolutely love these vegan, healthy fat and protein-rich energy bites. We keep a batch in the freezer for quick, healthy snacks. They’re endlessly adaptable: swap in different nut butters, play around with toppings, or keep them plain and simple. I usually go with roasted cashews as the base (for extra flavor), but raw cashews or almonds work just fine.
Dress them up by rolling in shredded coconut, cocoa powder, or hemp seeds—or dip them in melted chocolate and chill for a homemade candy-bar moment.
Cashew, Coconut and Date Balls
Makes about 16 bites
Vegan, gluten-free, naturally sweetened
Ingredients:
1 cup pitted medjool dates
1 cup cashews (or almonds)
1 cup shredded unsweetened coconut
¼–½ cup nut butter (any kind)
¼ hemp seeds (optional for extra protein)
1 tsp vanilla extract
0–1 tsp salt (taste as you go)
Optional roll-on toppings:
Extra shredded coconut
Hemp seeds
Cocoa powder
Melted dark chocolate (for dipping)
Instructions:
Add the dates to a food processor and blend until broken down and sticky.
Add the cashews, coconut, ¼ cup nut butter, vanilla, and salt (if your nuts are salted, you may not need any extra).
Blend until the mixture becomes uniform and starts to pull together into a dough. If it’s too dry, add a bit more nut butter.
Scoop and roll into 16 bite-sized balls.
Coat with toppings if using, or keep them plain.
Store in an airtight container in the freezer for up to 3 months.
They’re chewy, satisfying, naturally sweet, and full of healthy fats and protein.
