Winter Salad with Pears, Gorgonzola, and Pomegranate
Bitter chicories, sweet pear, tangy blue cheese, and nutty almonds - be still my heart!
I love dishes that add a pop of festive bright colors to the table - this would also be great at Christmas.
Winter Salad with Pears, Gorgonzola, and Pomegranate
Serves: 8
Ingredients
For the Salad:
1 head radicchio, torn into bite sized pieces
1 head butter lettuce, washed, dried and the larger leaves torn in half (leave the smaller ones whole)
1 5 oz. box of arugula
2 ripe pears, thinly sliced
1/2 cup Gorgonzola or other blue cheese, crumbled
1/3 cup Marcona almonds or toasted slivered almonds (substitute with toasted walnuts or pecans if preferred)
1/3 cup pomegranate seeds
For the Balsamic Vinaigrette:
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
6 tablespoons extra virgin olive oil
A pinch of salt and pepper
Instructions
Make the vinaigrette: In a small jar or bowl combine the vinegar, Dijon, olive oil, salt and pepper. Shake lightly or stir with a fork until ingredients are mixed but not fully emulsified.
Toss the lettuces with just enough dressing to lightly coat the leaves. Arrange layers of dressed lettuce on a serving platter or in a shallow bowl with a scattering of pear slices, blue cheese and the almonds. Finish with the pomegranate seeds on top.
Serve immediately.
