adding this to my list but checking on what the peel is like, bitter or does it turn sweet??

It’s a little bitter - like a marmalade would be. If you make it a day or two ahead the bitterness mellows out a lot - that’s how I like it. And if you use the greater amount of sugar in the recipe it won’t really be bitter at all.
