These chicken legs are cooked in the same style as my skillet roast chicken. No oil needed, just a very hot, preheated cast iron skillet and salt. The only thing different is I’m using whole legs and I add a lemon cut into 8 wedges.
The orzo salad is a favorite side dish that goes well with almost anything. To the parsley haters...try and leave it in - it adds a fresh, bright, herby flavor that really completes the dish if you give it a chance.
