One of my favorite fall side dishes: crispy Brussels sprouts with hot honey and fried sage. You have some options when it comes to the spice factor. First of all you can leave it out completely if you don’t do spicy! You can make hot honey by simmering 2-4 thinly sliced fresno, Serrano or Thai chilies with a cup of honey for an hour. Then strain or keep chilies and store in a jar in the fridge. You can also buy hot honey. If you want to get this on the table fast, add red chili flakes to the pan and drizzle the finished dish with regular honey. As for the fried sage leaves, it sounds fussy and complicated but it takes no time because you’re “frying” them in the pan as you cook the sprouts.
You can make this recipe roasting everything in an oven on a sheet pan. Alternatively, if you’re pressed for time you can start it in a hot skillet on the stove and then finish it in the oven. Both methods work. Some people tend to prefer oven cooking and others stove top - do what feels easier to you.
